Mexican Haystacks

This is the latest in my healthy eating kick. I've been trying to eat fresh foods, and when I did my weekly grocery shopping on Monday I found that they had mangoes at the store. I'm not really a fan of mangoes, but I know that my husband loves them and I decided to make a dish that could incorporate it into a fiesta of flavors.

MEXICAN HAYSTACKS

Ingredients:
 1 Cup Rice (white or brown)
1 Tbsp Butter
Handful of Cilantro
Juice of 1 Lime
1 Mango
1 Avocado
2 Tomatoes
2 Cups Black Beans
Salsa (I used salsa verde, since that was in my fridge, but I would highly suggest a Peach-Mango.)

Instructions:
Add 1 cup of rice to 2 cups of water. Add butter, cilantro, and lime juice, cook as normal.

Dice mangoes, avocados, and tomatoes and set aside.

Cook pre-softened black beans with salt and pepper.

When rice is done cooking, start your haystack. I started with the rice, then the beans, and then topped with veggies and drizzled salsa over to finish it off.

Voila!
